3 INGREDIENT SUGAR AND DAIRY FREE BLUEBERRY ICE CREAM


You can thank Jack for this. Ice cream is not a high priority for me. On rare occasions, my popcorn-buddy, aka Jack, decides he wants to deviate from our traditional movie-night snack and he almost always asks for ice cream.

This is so easy.

I'm slowly getting accostomed to always having frozen bananas on hand. These must be peeled first prior to freezing. I always have frozen blueberries on hand. Organic whole coconut milk is also a staple here - it just helps to have it COLD!

The original site where I was turned onto sugar and dairy free ice cream used an ice cream maker as part of the process. With this, by having your bananas and blueberries frozen and you coconut milk cold, no ice cream maker is necessary. I did however use my Vitamix to process.

INGREDIENTS:

2 frozen bananas

3 huge handfuls of frozen blueberries

1/2 can organic whole coconut milk

DIRECTIONS:

Throw all ingredients into your Vitamix. Starting out on slow, and quickly increasing the speed, and using a tamper, blend the ingredients until well mixed and processed.

Eat Immediately.
