Go figure - my VERY FIRST BLOG POST EVER - would be for a cookie recipe! What a health coach. ♥

My family and I have not used 'traditional' ingredients since November of 2010 when I was diganosed with Lyme Disease. At that time, I was instructed to go on a Gluten and Sugar-Free diet to prevent issues with yeast overgrowth during my antibiotic chemo therapy. Who knew this would change my life.

For those of you who have gone through changes similar you know that at times you can find yourself going without. I don't whole-heartedly endorse consuming cookies, mind you, but on occasion, there is nothing better.

Please enjoy this perfected cookie recipe.


1/2 cup of coconut

1/2 cup of chopped walnuts

2 1/2 cups of almond flour

1/4 tsp. salt

1/4 tsp. baking soda

10 TBS. Butter - I use half butter and half coconut oil

1 TBS. Almond extract

1/2 cup of honey

1 Cup of Chocolate Chips - I like the Enjoy Life brand

2 - 3 TBS. of Flax Seeds


Mix first 5 ingredients together.

Add in liquid ingredients, stir to combine well.

Add in chocolate chips and flax seeds.

Form into 1 inch balls - and bake at 350 for 7- 12 minutes, ON PARCHMENT PAPER.
